OMG! The Best Salmon Ever!

Salmon in Sauce

Oh, fish again! I said this to myself as I took the salmon out of the refrigerator. I had been mainly eating fish since staying at home. It is almost impossible to keep chicken in my cart when I am shopping for groceries online. So, salmon it is! But I could try something different this time rather than just searing the fish. Being at home can be so dull, so I was down to try anything to let the time pass by faster.

Should I put it in the oven or cook it with some sauce? I needed help figuring out the best way to cook salmon this time.

But aha! I decided to mix all those sauces in the cupboard into something spicy and sweet. You will not believe the mixture of spices I put together, which gave me this beautiful picture you see above. The taste was a dash of sweet and spicy, along with the tangy flavor of the lemon juice that I had added. So, what is your cuisine during this time of quarantine? Do you enjoy cooking at all? I have always loved cooking, but this is more than I have ever cooked. Not to mention all the new recipes I have come up with; they are spectacular.

What did I put in my sauce? Mhmm, just about everything!

Thyme

Garlic

Ginger

Scallions

Jamaican Scotch Bonnet Pepper

Lemon Juice

La Choy Sauce Sweet and Sour Duck Sauce

Sweet Baby Ray’s Barbecue Sauce

Grace Chicken Season

And how could one forget the ‘ketchup’ and ‘I can’t believe it’s not butter with coconut.’

Wow! This looks so good. I loved the combination of flavors. Especially the sweet barbecue sauce in contrast with tabby ketchup. Definitely going to try this during quarantine.

Salmon looks delicious! I too have been eating a lot of salmon. My favorite is cooking it in coconut milk like Jamaican ‘run dung’ . I also curry it. Sometimes I sear it then flake and cook it like codfish with lots of tomatoes, onion and sweet pepper. I just discovered the I can’t believe it’s not butter with coconut. I love it! Rub it into my flour when doing fried dumpling… nice flavor.
